Fall is my favorite season, so I try to incorporate fun festive things whenever I can. One of the way’s is by making yummy fall meals. I’ve been making this salad for my lunches and loving it! It’s such a nice treat in the middle of my day, so filling + so healthy!
Here’s how I make it:
- Organic Baby Kale & Spinach Mix as the base
- Dried Cranberries (the ones with 50% less sugar)
- Quinoa
- Baked Chicken seasoned with pepper
- Baked sweet potatoes
- Feta cheese
- Red onion
- Cucumbers
- Maple Balsamic Dressing
